The 36 Marcel Petite “fruitieres” (cheese dairies) are medium-sized and located mainly in mountain areas. This subtle diversity is why every Cru of Comté has its own characteristics and offers a range of exceptional richness and flavor.

When selecting Comté, the Marcel Petite cellar Master considers four key criteria: Delicacy, subtlety, intensity and depth of flavor. The ripening age is an indicator, but not the main criterion of selection.
